In the winter, I could live on soup alone. It’s easily my favorite meal and we try a new one every week, when we can. My mom found this recipe on Pinterest and had given it rave reviews. JCK and I completely agree. Realistically, it might be cheaper to just go have the soup, salad and breadsticks at Olive Garden, but I prefer eating it inside my own home with plenty of leftovers for weekday lunches. Enjoy!

Ingredients:

1 lb spicy Italian sausage

7 slices of bacon

5 medium russet potatoes (ours were enormous, so I used 4)

2 c chopped kale

1 c heavy whipping cream (I substituted some skim milk in)

1 qt water

2 cans of low-sodium chicken broth

1/2 large onion

3 cloves of garlic, minced

2 tsp red pepper flakes

salt and pepper

Instructions:

Crumble the sausage onto a baking sheet. Bake the sausage in the oven at 300 degrees for about 30 minutes or until no longer pink. Place on paper towels to drain.

Cook the bacon and crumble into small pieces. Slice the potatoes. Dice up the onion and mince the garlic. Throw the potatoes, onion, garlic chicken brother and water into a large pot on medium heat until the potatoes are cooked through.

Prepare the kale by chopping into bite-sized pieces. Add the sausage, bacon, red pepper flakes and salt & pepper to taste. Simmer for an additional 10 minutes, stirring occasionally.

Turn the heat to low and add in the kale and heavy cream. Let the soup heat through and serve.
